Marram › Wine
Thursday to Saturday the lights come down, the music comes up and a short list comes out.
About thirty bottles at any one time. Most of them Australian, a few from places worth the freight, and half of them open by the glass so you are never gambling a whole bottle on a hunch.
Changes fortnightly
Dry, fine bead, the one we open first.
Apricot and tea leaf. Ask before you commit.
Bone dry, built for the fish.
Restrained. No oak bombs here.
Light, chilled a little, drinks like summer.
The one for the steak sandwich.
Made to be shared, arrive as they are ready
Warmed, which is the whole point.
Salty, smoky, dangerous.
Whatever is best that week.
Bright and cold.
One local, one washed rind, one blue. With lavosh and quince.
A small piece. You will want two.
Thursday to Saturday evenings run on walk-ins. Come early and you will get a table; come at eight on a Friday and you may wait twenty minutes with a glass in hand, which is not the worst outcome.
$20 a bottle, one bottle per table, and only for something not already on our list. Bring the thing you have been saving.
